Finger Food – Lamb, Proscuitto and Sage Skewers

As the season for BBQ’s and outdoor dining comes around once more, I thought I’d share these fantastic skewers with you. I vaguely recall that the original recipe was for four large skewers on a bed of couscous, but I adapted them years ago to be party food, and have done them this way ever since.

A blogger that I regularly read, Joxy from Free Range Family, recently posted these beautiful orange muffins. I had to share them with you. I’ve also replaced the oranges juice and zest with pureed apple & cinamon (my favourite!) and with liquidised bananas. They were fabulous and they freeze and defrost really well too. Try them. Seriously. They are great!

As the winter days fade into spring, we have a few final opportunities for thick and healthy soups.

I tried this soup because I happened to have all the ingredients from my Abel and Cole veggie box and was absolutely stunned by it. Utterly delicious.  I do suggest you try it!

Regular readers will know by now that by Sunday lunch time my meals take on a little bit of a ‘salvage job’ feel as I try to use up the remains of the vegetable bowl and any leftovers in the fridge. This makes way for the new veggie box delivery on Monday, and makes sure that we stick to our ‘no food wastage’ challenge for this year.

We have had quite a rough few weeks, with a continuously but constantly changing sick little one and mommy. As a result, cooking consciously hasn’t been high on my list of priorities. As Martin’s been working late in to the evenings, we’ve been neglecting the veggie basket and going for quick and simple meals.

A few years ago, Martin and I were blessed to spend a bit of time living in the wing above the ballroom of an old English Manor house that belongs to a bona fide viscount. One of the perks of living in this beautiful property towards the end of summer was that the orchard was in full bloom, and we would spend the evenings after work picking tubs full of blackberries and baskets of apples.
